Nature's Cuisine Cedar Small Oven Roasting Plank Review

This plank did an excellent job on the salmon filet - kept it moist and flavorful even though it was roasted with the skin on. I bought the small and it was a little small for a 1.25lb wild (thinner) filet when vegetables were added, but it definitely holds a complete meal for 2.

Cooking times need to be adjusted (longer) - i used a probe thermometer to be sure. Even tho the instructions say that the plank should be seasoned with oil the first few times, you definitely need to also soak it. I used a mixture of warm water (soaks in faster), white wine and fresh herbs for a few hours.

After the first use I didnt notice any splitting or cracking - it seems like it will hold up for a while, sort of justifying the priciness as compared to the disposable grilling planks.

Keep Steel Rods Tight
It is characteristic of wood to develop fine cracks or warp when it's heated. To counteract this, steel tightening rods have been inserted along the ends of the plank. When the plank is new before each use, tighten the rods just until snug with the adjustment tool supplied with the plank, or by using a 7/16-inch socket wrench. After the plank has been used several times the wood will settle and the rods will only need occasional adjustments to keep them snug.
